When in the roof by footprint sketch mode select all of your newly created boundaries and turn off the defines slope parameter.
Select the original soffit and edit the sketch.
In the type selector select the type of spot slope to place.

This is how i d do it too since you re tagging roofs anyway and it could be argued having a schedule with roof type area totals to accompany the plan on a sheet would be more useful for those reading it since areas per tag are going to need to get summed by someone anyway.
